The BEST way to use up leftover hardboiled eggs- Chipotle Deviled Eggs!The best side bonus of dyeing Easter eggs is, without a doubt, the deviled eggs that you get to make to use up all those leftover hardboiled eggs after Easter! And since we got an early start dyeing eggs this year, we’ve already made a couple batches.

The BEST way to use up leftover hardboiled eggs- Chipotle Deviled Eggs!These chipotle deviled eggs are our favorites so far. They have all the best parts of deviled eggs with a little spicy kick. OH MY YUM.

INGREDIENTS

12 hardboiled eggs, halved

1/3 cup chipotle aioli (I used store-bought- you could also use chipotle mayo)

1 tsp mustard

1/8 cup spicy pickles, chopped

Optional (but yummy!) toppings- crispy bacon, chives, parsley, chipotle

DIRECTIONS

Combine eggs yolks, aioli and mustard and mix well. Add in spicy pickles. Spoon back into egg whites. Top with crumbled crispy bacon, thinly cut chives, a sprig of parsley and a sprinkle of chipotle.
