Ok, so I am sure you have noticed that Kirst and I kind of have a thing for coconut. I mean, we really love coconut. Even more, we die for the coconut plus chocolate combo. The best combo in the world, if you ask me (or Kirst). Well, luckily a friend of mine requested the coconut + chocolate combo for her birthday cake, so I got to create this delicious recipe with chocolate and coconut flakes and mounds bars cooked right into it. I literally had to hide a piece so that there would be something for me to take a picture of to show y’all. It was SO tasty and moist and was the perfect “special-day” dessert.

Chocolate “Mounds” Cake

Ingredients:
1 box yellow cake mix
3/4 cups oil
3/4 cups water
3 eggs
1 small package instant chocolate pudding
1/2 cup shredded coconut
8 oz. plain greek yogurt or sour cream
4 packs (8 bars) mounds bars

Directions
Pour the cake mix, oil, water, eggs, and pudding into a mixer and mix on low speed until all ingredients are combined, then turn up the speed to medium and mix for another 3 minutes. Cut the mounds into pieces and fold in the yogurt or sour cream and the mounds pieces. Grease a bundt pan with crisco or butter and lightly flour the surface. Bake according to the instructions on the cake mix box. Let cool (at least 20 minutes, no more than an hour) Flip onto a cake stand or platter. Sprinkle with shredded coconut and serve with whip cream.
