One of the greatest benefits of living on an island is the prevalence of fabulous, fresh seafood at every turn (I have been so thankful that Burke and Pi love fish!). We have been trying out all sorts of tuna recipes, but this one for tuna mango sliders (using yet another readily available Saipan-staple) is my favorite so far. If you have access to fresh tuna, you should make these. Maybe tonight.
INGREDIENTS
12 oz (3/4 lbs) tuna, finely chopped
1/2 cup mango, finely chopped
1/2 cup red pepper (we used mountain apples, similar textur finely chopped
2 T onion, finely chopped
1 T basil
1 T mint
1 T mayo
1 t lime juice
Directions- Combine all ingredients together. Roll into small patties (this combo should make about six patties). Dip each patty in extra breadcrumbs. Grill. Whisk together mayo and lime juice. Add to burger. Serve.
