the best beach drink- tastes like summer in a glass! If you follow kojo on instagram, you already know this, but Adam and I snuck away this week for a little getaway full of sun, and surf, and seafood.

the best beach drink recipeThe kids are with Nana (with every FaceTime conversation, I am more convinced that they might not want to come home), and Adam and I have spent the week admiring various beaches, ingesting as much fresh fish as possible, chatting without interruption, and sleeping. And I have been delighting in the abundance of Coca Cola Light (I think they might serve this stuff in heaven… does anyone know if the Diet Coke recipe varies regionally? Because I love Diet Coke, but lovelovelove Coca Cola Light…).

how to make the best beach drinkOh, and we’ve been spending our beach breaks making Coke slushies. Our room at the resort has a partial kitchen and our blender wins the most-used-appliance award this week, for sure.

how to make diet coke slushiesJust in case you are headed to the beach, or (even more!) if you’re needing a taste of the beach from a non-vacation-y locale (like your kitchen), I thought I’d share my favorite beach-y drink recipe.

how to make the best beach drinkStart with a couple of cups of ice, add half a juice glass (probably about a shot?) of coconut rum and half a liter of Coca Cola Light (or Coke, or Diet Coke) to your blender. Mix well and enjoy (side of leisure reading and sound of lapping waves optional).

best beach drinkWhat’s your favorite summer-y drink, friends?

It’s a vague memory but I think it is different. Overseas I loved Coca Cola Light but don’t mess with Diet Coke here. That’s probably a good thing though! Especially in my condition. ๐Ÿ™‚
    Beautiful pics!! I’m jealous…

Kirst, pretty positive it does vary by region. I’m thinking diet-coke-tasting-world-tour-2014?

Yes they are different! The sweetner blend used for Coke light is formulated based on consumer preference in that region!
