the med salad

The Med Salad at Noodles and Co. was one of my go-to’s during my pregnancy.  I love it.  In fact, some weeks this summer we frequented the Noodles down the street from our house three or four times to satisfy my med salad needs.  Recently, I loaded up on the ingredients they use and made my own version of the Med Salad.  It’s not perfect, but it’s close.  Enjoy, y’all!

Ingredients (for one person):
-mixed greens
-half a cucumber, thinly sliced
-half a tomato (I used campriano, but I think halved cherry tomatoes would be great as well)
-4 or 5 kalamata olives
-sprinkle of feta cheese
– short pasta noodles, like a spiral noodle or macaroni
Dressing
-plain greek yogurt
–sriracha
-garlic salt
Mix a couple tablespoons of yogurt with a few drops of sriracha (hot sauce) and a dash or two of garlic salt.  Spoon over salad.  Enjoy!

    This is my most favorite salad, so I never complain when my 3 year-old chooses "the cheesy noodle place" to eat…I actually have them put the ceasar dressing on mine instead…LOVE…

    I love that salad too! It's reminding me I still have a coupon for there that I need to use. Maybe tomorrow…
