Our mom LOVES cheesecake. Since she loves zero desserts, it is kind of a surprise that she has a favorite sweet at all. But even more ironic- she can’t do dairy or gluten. UGH.
For her birthday, we figured we’d attempt a dairy free, gluten free cheesecake. And it turned out great! I mean, if you can eat dairy and gluten, I’d probably go the traditional route. But if you can’t this is a great replacement for a cheesecake craving.
CRUST
1 1/4 crushed gluten free graham crackers
1/4 sugar
1/4 cup melted dairy free butter
Combine and press into a springform pan. Bake for 5 minutes and set aside.
FILLING
8 oz dairy free cream cheese
1 scant cup sugar
1/3 cup dairy free sour cream
1 tsp vanilla
3 eggs
Blend well. Pour over the crust and bake at 350 for one hour.
Top with berries and enjoy… with lots of coffee (like our mama!). Happy dairy free, gluten free celebrating!
