Ok, I need a show of hands- how many of you are doing some sort of clean eating/ whole 30/ paleo diet after the holidays? We aren’t doing a full on detox, but we something close to that. This herb dressing is the perfect addition to all sorts of clean eating foods. It goes amazingly with steak, but is also yummy with chicken, eggs, potatoes and as a salad dressing.

Chimichurri

Ingredients
1/3 cup fresh cilantro, densely packed
2/3 cup fresh parsley, densely packed
4-6 cloves garlic
1/4 cup purple onion, finely minced
1/3 cup olive oil
1/3 cup red wine vinegar
1 lime, zest and juice
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon red pepper flakes (more if you like spice)

Directions
Chop the garlic, parsley and cilantro roughly and put into a food processor. Process in short 1-2 second pulses (so that the herbs don’t get over heated) scraping down the sides if necessary. Put the mixture in a medium bowl and add the other ingredients, stirring to combine. Allow to sit in the fridge for 30 minutes before using.
