the best blueberry mojito recipeI love mojitos. Love them. I think mint and lime were made to go together (incidentally, I love the mint limeade at Cafe Rio as well!). And I lo-ove adding fruit, like blueberries, to this yummiest of drink concoctions.

To make one blueberry mojito-

1 lime, juiced

10 mint leaves

1/4 cup blueberries

1 tablespoon sugar

1 shot rum

3/4 cup club soda

how to make a pitcher of blueberry mojitosDIRECTIONS- Add lime juice, mint leaves, blueberries and sugar to the bottom of a cup. Muddle, mashing the berries and the mint leaves. Add rum and club soda. Mix well and serve.

Here’s the thing, though- blueberry mojitos are best shared. So, do yourself a favor and mix up a whole pitcher of this yumminess at the outset!

6 limes, juiced

1/2 cup mint leaves

1 cup blueberries

6 Tablespoons sugar

1 1/2 cups rum

2 cups club soda

2 cups limeade

DIRECTIONS- Muddle lime, blueberries, sugar and mint. Add mint mixture, rum, club soda, and limeade to a pitcher full of ice.

    Question about the limeade – Do you mean frozen limeade concentrate, or 2 cups of prepared limeade? I’m assuming the latter, but just wanted to make sure.

    Why do you use limeade for only the large batch, but none for the individual drink?

      Hey Jen, you could just multiply out the smaller recipe, but since lime juice plus simple syrup is essentially limeade, it’s easier (for me) to use limeade for the bigger batch. 🙂
