happy birthday to my best boy (and a creme filled cupcake how-to)

We spent the weekend celebrating Mr. Burke’s 4th birthday (and running a race, and getting ready for Adam’s graduation party, but those are stories for another day).

You might’ve seen on Facebook that Burke chose his birthday itinerary- Lamar’s donuts for breakfast, meatball lunch at Ikea (even funnier- he wanted to play in Smaland, so we spent part of Burke’s Big Day wandering around Ikea without Burke- haha!), and this local Native American Eatery called Tocabe for dinner (he loves their funnel-cake-esque frybread). I love it that the whole day revolved around food (I plan special days for Adam with similar attention to the menu).

I know that all parents say this at every birthday, but it really is true- I can’t believe how quickly time passes! How can he be 4 already? Even more- he absolutely delights my heart, that kid.

A few of my favorite things about Burke at 4-

*When he counts, he calls thirteen “Three-teen.”

*He definitely knows more about dinosaurs (and insects, and arachnids, and cylopods [that’s what centipedes are- and, yes, I had to google that to be sure I was writing the correct word]) than I do. Smartiepants.

*He is such an encourager. Burke often tells me, “Good job running mom,” after we trek around the park, or “Good job driving!” as we trek across town. He also tells Piper Jane how beautiful she is every time she comes out of her room in a dress (aka- every day). Melts my heart.

*He cannot carry a tune, but that doesn’t stop him from belting out songs at the very top of his lungs. His three favorite song are Kari Jobe’s City on a Hill, Jason Gray’s Who I Am To You and Britt Nichol’s All This Time (oh, and he loves Shakira’s Waka Waka song from the World Cup!). He knows all of the words. Seriously, it is the cutest thing ever.

*He seems to have not inherited one single trait from me, and not just in his looks. He is his daddy’s son, through and through. Which means he’ll be quite the catch someday.

*Sometimes he winks at me. Adorable.

And just in case you have a birthday celebration coming up and you’re wanting to whip up a batch of creme filled cupcakes, try this (it’s SUPER simple!)-

Bake a batch of cupcakes (we tried this homemade confetti cupcake recipe by Sweet Tooth)

Using this Easy Frost frosting, poke a hole in the cupcake.

Fill the cupcake with frosting by pushing the nozzle.

The finished product- a cupcake with creme filling (and an extra dollop of frosting on top).

Add frosting on the top and you’re done! The perfect birthday (or cupcake bar) treat!

  1. Adorable! Happy Birthday! And I agree, time does FLY! My 3 just turned 5, 3 & 1. My 5yo “graduated” from Mother’s Day out the other day. They sang a song & brought us a flower & played a sweet slide show. I was crying!! There is no hope for me when he really graduates!! haha!

    1. Leigh Anne, I am TOTALLY with you! In fact, I was crying the other day at the gym watching Kim Kardashian get married because I was thinking about how that’ll be my babies someday. Crying. On the treadmill. I am a hot mess! I love it that you cried at MDO graduation- I will join you in that when Burke graduates. ๐Ÿ™‚ Thanks for making me feel normal. ๐Ÿ™‚

  2. Aw, happy birthday Burke! Em’s favorite song is Holly Jolly Christmas, and she requests it daily. STILL. Four year olds are fun.

  3. Wow, the boyfriend would die for those cupcakes. The man is a huge fan of rainbow sprinkles. I would personally die to get my hands on that adorable orange and turquoise dress or at least a pattern for it!
