valentines day yummies- red velvet pancakes and cream cheese frosting syrup

Ever since I saw this post on How Sweet It Is, I’ve been dreaming of cake batter pancakes. Add in my love of red velvet, cream cheese syrup, SPRINKLES and we had ourselves a lovely, valentines day worthy feast.

I used the How Sweet It Is Cake Batter Pancake recipe, but omitted the sprinkles and used red velvet cake mix. Here it is (just so you have all your recipes in one place)-

1 1/2 cups flour

2/3 cup red velvet cake mix

1 tablespoon sugar

3/4 teaspoon baking powder

pinch of salt

2 eggs

1 teaspoon vanilla extract

1-2 cups milk

Mix the dry ingredients, add in the wet ingredients.  Mix with a blender until there are no lumps- it should look like pancake batter. Pour into a medium-hot skillet, about 1/4 a cup per pancake. Cook for about a minute on each side (maybe more). Serve warm, with cream cheese syrup and sprinkles! YUM.

 

Cream cheese frosting syrup-

4 oz whipped cream cheese

1 Tablespoon vanilla frosting

1/2 cup milk

1/3 cup powdered sugar

1 teaspoon vanilla

Directions- Combine all ingredients. Whip with a mixer until smooth and syrupy. Serve with red velvet pancakes and sprinkles. YUM.

A couple other funny notes about this combination-o’-red-velvet-goodness. First- we had this for dinner (sorry mom!). Best dinner ever. Second, we made this as a test run (I was looking for a Valentines breakfast tradition). Since it passed with flying colors, we’ll be eating it again in less than a week. I am very much looking forward to that.
