tasty goodness- strawberry rhubarb pie

Potlucking on Monday? You’re in luck! This pretty easy, and yet very delicious, perfect mix of tart-sweet, Strawberry Rhubarb Pie (with streusel topping) is the perfect Shareable Yummy to bring a Fourth of July barbeque. 

The recipe is a modified version of this one. If you’ve been following for very long, you know I like to cut the called-for-amounts of sugar in half (most of the time I mess with the butter/oil requirements as well). If you like sweet pies, add more of the sweet stuff. 🙂

INGREDIENTS
3 cups chopped rhubarb
1 cup chopped strawberries
1/2 cup sugar
5 T flour, divided
1/2 t lemon juice

9″ unbaked pie shell (I make my own using this recipe)

STREUSEL TOPPING
1/3 cup flour
1/3 cup oats
1/3 cup brown sugar
1/2 teaspoon cinnamon
1/3 cup butter

Combine fruit, sugar, flour and lemon juice.

Let sit 10 minutes. Add another 2 T flour.

Turn into pie shell.

Combine dry topping ingredients. Cut in butter until crumbly.

Sprinkle over rhubarb mixture.

Bake at 375 (F) for 50 minutes (make sure you put a foil-lined pan underneath in case your pie bubbles over).

Take to a Fourth of July barbeque and become the hit of the party! 🙂

    YUM!!!! this is my favorite pie — and now your lovely photos have inspired me to head to the store to find rhubarb! wish me luck {we live in central NY for another 6 weeks and lucky to find pita's in our local store!}. happy 4th!

    I made this from the recipe with raspberries instead of strawberries (that's what they had at the farmer's market). It was INCREDIBLE! Thank You for posting this recipe!!!
