beautiful, easy, delicious icing

I am convinced that everyone needs a go-to icing recipe. This is mine.

cream cheese icing
1 stick butter
1 8oz. package cream cheese (use the real stuff, the light kind doesn’t hold up as well)
1 pound powdered sugar
1-2 tablespoons milk (depending on consistency)

In an electric mixer, combine cream cheese and butter and mix until fully combined. Slowly add the powdered sugar if the mixture is too thick, slowly add milk until it reaches desired consistency. If you are planning on decorating with a bag and decorating tip, you will want it to be pretty thick so that it holds up well.

Amazing variations-
cinnamon nutmeg icing
cream cheese icing (above)
1/2 teaspoon ground nutmeg
2 teaspoons ground cinnamon
add near the end of mixing to create cinnamon “swirls” in the icing

chocolate icing
cream cheese icing (above)
2 tablespoon unsweetened cocoa
add cocoa when you add the powdered sugar

This recipe also is fantastic on the amazingly delectable coffee cupcakes. Really, the possibilities are endless.

    Okay now for a question that has nothing to do with this post… Are you going to do a tutorial on the knotted "quilt" once you win SYTYCC? I ABSOLUTELY love that bedding!! It is just what I've been wanting for the winter! It would so go with our room (well once our room is completed, ha ha!) Yep it is gorgeous!! You wouldn't believe all the great ideas you have inspired me to tackle… ok thats once we have the addition completed!

    I just have to ask though….how much is 1 stick of butter…? Can you give it to me in grams, or even ounces or something (something measurable?), pretty please…? (we don't work in sticks around here, but grams, hehe)
