homemade rocket pops

Have I mentioned my love for summer yet?  I love warm days and sprinklers and playdates at the park.  Yep, I. love. summer.

To sweeten this already sweet season, Burke and I have a new favorite treat- homemade rocket pops.  They are pure goodness y’all.  And wouldn’t they be a great red-white-and-blue treat for the 4th of July?

Homemade Rocket Pops
Ingredients
Berries (we’ve tried strawberries, blackberries and blueberries so far and have loved them all!)- we use about 20 berries at a time
Apple juice
Vanilla Yogurt (1 single serving sized yogurt makes 4 rocket pops)

Directions
Puree berries with a little apple juice (just enough to cover the bottom of the food processor).  Alternate layers of berry puree and vanilla yogurt in popsicle molds.  Freeze for a few hours.  Enjoy on a warm summer afternoon.  See, goodness?

ps- Just so you know, I saw a variation of this idea in Cooking Light, but there was simple syrup involved and, being my mother’s daughter, I always wonder if recipes actually require the sugar they call for.  This one works just fine without it. 🙂
