Baked Sweet Potato Chips at kojo-designs
We have been eating a lot of sandwiches around here lately (panini all the way) and this is the perfect side. These would also be great with a burger. Word to the wise though- these take a bit of time, so don’t plan on making these if you are having 50 of your closest friends over… you will be cursing me by the end. 2 medium potatoes make a medium size bowl. Oh and one other thing, the sweet potatoes we get at my grocery store here in the Middle East are white on the inside, not orange. Here, only yams are orange. 🙂

Baked Sweet Potato Chips
Ingredients:
2 medium sweet potatoes
olive oil
kosher salt
cinnamon (optional)

Directions:
Preheat oven to 200 degrees. Using a mandolin, slice the sweet potatoes very thin. Make sure to cut all the potatoes the same thickness, for even cooking. Place the potatoes in ice water while you work, which will leach out some of the starch and prevent browning. Taking a handful at a time, dry off the potatoes and place in a bowl. Drizzle with olive oil and lay singled layer on a cookie sheet. Sprinkle with salt and a tiny bit of cinnamon. Bake for 25-30 minutes, flip the chips, sprinkle with more salt and cinnamon. Bake for another 20-30 minutes until the chips are golden brown. Lay out in a single layer on a paper towel. (This is important because if the chips are placed all together while they are still hot, they will steam and get soft).

Enjoy as a side with a yummy sandwich, or just as a tasty afternoon snack!
