When we were in the middleeast in June, Jordan and I discovered this fantastic whoopie pie recipe. The filling is magical, especially if you are a frosting loving gal like me.
Fast forward a couple months to me planning a ‘Welcome Cutie Pie’ baby shower for some of our good friends (and by baby shower, I mean a backyard barbeque with really great food and a few garlands and balloons). Of course, I had to incorporate the Whoopie Pie recipe… it’d be unkind of me not to.
And why make one batch of whoopie pies when you can make three?
I ended up making Red Velvet Whoopie Pies, Meyer Lemon Whoopie Pies and Chocolate Mint Whoopie Pies. My favorite were the red velvet, but the lemon ones were the crowd favorite for sure.
Here’s the recipe info in case you need to replicate (you probably do- just sayin’).
RED VELVET WHOOPIE PIES (modified from this whoopie pie recipe)
1/3 c. water
3 tbsp. oil
2 eggs
1 c. confectioners’ sugar
1 c. marshmallows
1/2 tsp. vanilla
MEYER LEMON WHOOPIE PIES (modified from this whoopie pie recipe)
1/4 c. water
3 tbsp. oil
2 eggs
1 c. confectioners’ sugar
1 c. marshmallows
1/2 tsp. meyer lemon juice
1/3 c. water
3 tbsp. oil

1/2 tsp. mint extract
