homemade tomatillo ranch salad dressing (like cafe rio, but no cilantro!)

homemade tomatillo ranch- like cafe rio (but without cilantro!)

homemade tomatillo ranch- like cafe rio (but without cilantro!)We love Cafe Rio so much around here. So much. And best of all, their tomatillo ranch salad dressing. But since there are no Cafe Rios near me, I have to make my own. And in January, we usually do a “reset” where we pray about the year to come, and fast both processed carbs and sugar to remind us to pray. Which means we are making SALAD (and all-the-salad-dressings! And especially THIS salad dressing!) a ton right now.

homemade tomatillo ranch- like cafe rio (but without cilantro!)To make the (slightly improved) tomatillo ranch like Cafe Rio- gather-

INGREDIENTS

1 (1 ounce) package Hidden Valley Ranch Dressing mix

1 cup buttermilk

1 cup Mayo

1 large or 2 small tomatillos

1 clove garlic , minced

1/2 bunch parsley, chopped

1/2 teaspoon lime juice

1/2 to 1 small jalapeno , seeds removed

DIRECTIONS

Combine ingredients in a food processor. Serve over fajita salad. Or eat with a spoon.

New Years Cookies- yummy and sugar free

new year's cookies- yummy and sugar free (all the 'sweet' comes from bananas)

Guys, my mama introduced us to these ‘healthy’ cookies and I can’t stop making them! Not only are they super yummy, they get their ‘sweet’ from bananas and are otherwise sugar free. They’re the perfect thing to keep in the freezer for crazy school mornings, or mid afternoon snacks, or a New-Year’s-Overhaul-Approved sweet treat. Totally […]

dragonfruit smoothie recipe

dragonfruit smoothie recipe

We can’t get enough of dragon fruit around here- even though the taste is super mild (similar to a kiwi), dragon fruit smoothies are absolutely the most fun. Because, bright pink! Also, since we are trying to eat as many fresh mangoes as we can before we leave the tropics, pretty much all smoothies around […]

the most delicious hummus recipe

the best hummus recipe- brought straight from her sister's days living in the middleeast

There are two things that I will always treasure that came out of my sister’s first stint living in the middleeast- my niece Keadryn and a legit hummus recipe. This hummus is the stuff of dreams, y’all- creamy and delicious with just the right touch of garlic. And you might have the stuff on hand […]
