skinny treats- pumpkin chocolate mousse

I love this pumpkin chocolate mousse so much y’all. It combines three things that I really love- 1. pumpkin, 2. chocolate, 3. patterned wooden spoons. Plus, in the season of rich-and-decadent, this is a great way to add a healthier, but still yummy, option to the dessert table.
INGREDIENTS
1 packet fat free chocolate pudding
2 cups unsweetened almond milk
1 cup canned pumpkin
1 1/2 cups lite cool whip
1 teaspoon cinnamon
1 teaspoon vanilla
Large dark chocolate (or semi-sweet) chips
DIRECTIONS Whisk the pudding mix, almond milk, cinnamon and vanilla for 2 minutes, until pudding begins to thicken. Add pumpkin. Whisk together. Mix in cool whip. Shave 6-10 large chocolate chips into the mix, whisk together. Portion into small glasses. Top with more dark chocolate shavings (about 1 per shot glass). Each serving = 40 calories (in fact, even if you eat the entire batch, it’s still only 600 calories!).
Yummy (though, full disclosure- I probably like the coconut chocolate mousse better. To be fair, coconut-chocolate is my favorite combo ever).
