color your summer 3 with delia creates and kojodesignsToday’s lovely guest, Melissa from No. 2 Pencil cooks, bakes, creates… and even shares fabulous green popsicle recipes for Color Your Summer!

Green PopsiclesHi friends! I’m Melissa from No. 2 Pencil, and I’m so happy to be a part of this gorgeous and colorful series! I thought it would be fun to share these green popsicles. They are beautiful, delicious, and packed with healthy stuff! I used light color fruits, juice, and baby spinach to make the popsicles bright green. They taste just like a fruit popsicle, so even your picky eaters will love them!

Green Popsicles

I adapted these popsicles from my green smoothie recipe, and used the same popsicle mold as my Oreo Pudding Pops.

Green Popsicles

Makes about 10 popsicles

1 cup of frozen mango

1/2 of a large ripe banana

1 cup of freshly washed, firmly packed baby spinach

1 cup of light colored fruit juice – I used Dole 100% Juice Pineapple Orange Banana

Blend all ingredients until smooth and pour into popsicle molds. Freeze 2-3 hours.

  1. Looks yummy and pretty!! I miss maxing spinach smoothies every day. You just feel like patting yourself on the this-is-healthy-for-me back a bit every time that they are tinged (or fully) green-colored. 🙂
