Butternut Squash Soup (seriously, my favorite soup- modified from this recipe)
1 1/2 pounds butternut squash
1/2 large onion, chopped
1 clove garlic
1 t olive oil
1 t fresh rosemary
pinch salt, pinch pepper
3 cups chicken broth
Peel and cube the butternut squash.
Saute garlic and onion in the olive oil for a few minutes. Add squash, rosemary, broth, salt and pepper.
Bring to a boil. Reduce heat, cover, simmer 20 minutes.
Puree half of the soup in a food processor or with a hand blender.
Serve with a sprig of rosemary and some yummy bread- delicious!
