green tutorial- kiwi and creme popsicles

Today we have the lovely Jenny from The Southern Institute joining us. Can I tell you how many times I’ve wished I lived in the same town as this girl? Good news- Jenny is here today sharing her drool-worthy kiwi crème popsicles. Seriously- how fabulous do these look?

Hello, kojo friends!  I’m am over the moon excited to be back again this year for Color My Summer.  This is such a rockin’ series.  Last year I tackled all of the colors of the rainbow with cake pops.  This year I’m sticking with one beautiful color, green.  For some reason, as soon as I started thinking green my mind drifted to food… green food… kiwi, to be exact.  I love kiwi!  It’s one of my favorite fruits and it just screams summer to me.  I thought I’d pair kiwi with one of my other favorite summery things- popsicles.  They are a match made in heaven, let me tell you!  Let’s get started, shall we?

 

There are two parts to this recipe… the kiwi and the creme.  
For kiwi puree
7-8 kiwi fruit
1/3 cup sugar
1/3 cup water
Peel and quarter the kiwi fruit…
Puree kiwi in a food processor or blender…
Bring sugar and water to a boil in a small saucepan.  
Allow to cool, then combine with the kiwi puree.
For the creme
1/2 cup sugar
1 cup low fat greek yogurt
1 cup heavy cream
Whisk together sugar, yogurt and cream.
To make the popsicles
  • Pour a layer of creme mixture in the bottom of the popsicle mold, cover and put in the freezer to freeze.
  • Add a layer of kiwi puree and partially freeze, until it is firm, but not solid.
  • Insert the popsicle sticks 2/3 of the way into the kiwi, or until they hit the solid creme layer.
  • Repeat the creme layer, filling just short of the top of the mold.  Freeze completely.

  1. Yummy! We made kiwi/peach popsicles recently! Now I am going to have to try these since we just ran out of popsicles… and its pretty warm out!

    1. Another favorite of ours is blueberries and cream. Instead of layering, I swirl the blueberries with the cream… so delicious! Have a great time making (and eating) these! 🙂

  2. I know my comment comes very late but I love these! I Gonna try to make some today.. I’m just wondering if anyone knows where to get this shape of molds from? Mine are round and don’t work very well.

    1. Linda, I saw some at Cost Plus World Market that are ‘popsicle’ shaped… I wonder if several other stores will carry the popsicle shaped ones as summer approaches?
