homemade cilantro-free pico de gallo salsa recipe (so yummy even cilantro-lovers will eat this by the bowlful!)Earlier this summer, we finally had success growing tomatoes in Saipan (we’ve been trying since we moved there!) and there was much celebrating. And lots of salsa (as in, Daily Batch of Salsa lots). We lost our tomato plants in the typhoon (sad day), but right now, we have access to my sister’s garden. And so- more salsa.

Since both Adam and I hate cilantro (lucky pairing), our recipe doesn’t include it. You can always add some if you happen to be of the cilantro-loving variety. But why ruin something so yummy?

2 cups chopped tomatoes (the ones we’ve been using are like small romas without many seeds- if you’re using really seedy tomatoes, you might want to remove some of the seeds)

1 finely chopped jalapeno

1 finely chopped onion

½ chopped red pepper

½ chopped green pepper

1 clove garlic, minced

1 teaspoon garlic salt

Juice of one lemon or lime (a couple tablespoons)

Chop. Mix. Chill.
