When we were in the middleeast in June, Jordan and I discovered this fantastic whoopie pie recipe. The filling is magical, especially if you are a frosting loving gal like me.

Fast forward a couple months to me planning a ‘Welcome Cutie Pie’ baby shower for some of our good friends (and by baby shower, I mean a backyard barbeque with really great food and a few garlands and balloons). Of course, I had to incorporate the Whoopie Pie recipe… it’d be unkind of me not to.

And why make one batch of whoopie pies when you can make three?

I ended up making Red Velvet Whoopie Pies, Meyer Lemon Whoopie Pies and Chocolate Mint Whoopie Pies. My favorite were the red velvet, but the lemon ones were the crowd favorite for sure.

Here’s the recipe info in case you need to replicate (you probably do- just sayin’).

RED VELVET WHOOPIE PIES (modified from this whoopie pie recipe)

1 lg. box red velvet cake mix
1/3 c. water
3 tbsp. oil
2 eggs
Mix ingredients together, drop teaspoon-sized balls on greased cookie sheets. Bake 8-10 minutes at 350.
FILLING-
1 c. shortening
1 c. confectioners’ sugar
1 c. marshmallows
1/2 tsp. vanilla
Soften the marshmallows by heating in the microwave for 15-20 seconds. Beat together with other ingredients. Pipe onto cooled cakes using a frosting bag and large tip.

MEYER LEMON WHOOPIE PIES (modified from this whoopie pie recipe)

1 lg. box vanilla cake mix
1/4 c. water
2 tablespoons meyer lemon juice
Meyer lemon zest (1 teaspoon)
3 tbsp. oil
2 eggs
Mix ingredients together, drop teaspoon-sized balls on greased cookie sheets. Bake 8-10 minutes at 350.
FILLING-
1 c. shortening
1 c. confectioners’ sugar
1 c. marshmallows
1/2 tsp. meyer lemon juice
1 tsp meyer lemon lemon zest

CHOCOLATE MINT WHOOPIE PIES (modified from this whoopie pie recipe)
1 lg. box chocolate cake mix
1/3 c. water
3 tbsp. oil
2 eggs
Mix ingredients together, drop teaspoon-sized balls on greased cookie sheets. Bake 8-10 minutes at 350.
FILLING-
1 c. shortening
1 c. confectioners’ sugar
1 c. marshmallows
1/2 tsp. mint extract
Several drops green food coloring (optional)
Soften the marshmallows by heating in the microwave for 15-20 seconds. Beat together with other ingredients. Pipe onto cooled cakes using a frosting bag and large tip.

Also, in other fun news- Jenny and Shawn (our Cutie Pie Shower guests of honor) welcomed Baby Ethan this week! Can’t wait for that little guy to be big enough to come to babysitting swap!

    Silly question, what diameter are your toppers? I have a few circle punches but I am not sure which size I like best. So I am curious what works for you.

    1. Dayna- I’m in… move here and we’ll be BFF. Or if we’re ever in Cleveland, ditto.
      I think my circle punch is 2.5″, so I’m pretty sure that’s the diameter of the toppers. I also use a smaller circle punch sometimes (like in the Oh Snap party)… in short, I think a bunch of sizes can work. ๐Ÿ™‚
      And, just so you know, I have “Party Printable How To Series” on my to do list. It’s coming your way, friend. ๐Ÿ™‚

A friend of mine recently gave me a whoopie pie recipe book and I have been dying to find the time to make some. There is a super yummy looking frozen mint and chocolate one that caught my eye. thanks for this!
