the best of summer- how to make pizza on the grill

I am pretty sure that this recipe was made for summer. Or maybe summer was made for this recipe? Either way- fresh tomatoes and basil (we also add squash, peppers, whatever is in our garden that week), homemade pesto, plus grilled pizza dough is perfection. Seriously.

I am also not exaggerating when I say that we make this once a month. In the summer, maybe even once a week. And I’m making it for dinner tonight.

Ingredients-

Dough (we use my friend megan’s recipe and make it in the breadmaker)

2 1/4 teaspoons fast rising yeast
1 teaspoon brown sugar
1 teaspoon salt
2 tablespoons olive oil
1 1/2 teaspoons italian seasoning
1 1/2 cups warm water
3 1/2 cups flour

Toppings
1 lb fresh mozzarella or goat cheese
Tomatoes, thinly sliced (or halved, if using grape/cherry tomatoes)

Grilled chicken

Pesto
Fresh basil (the amount you use will depend on how much you like basil… we load up)
Olive oil

Make your dough (either in the breadmaker or by hand).
Prepare all of your ingredients before hand. Set aside (you’ll want these next to the grill when you need them).

After stretching out the dough into a large, thin rectangle, put it on a cookie sheet.

Use the cookie sheet to slide it onto the hot grill.

Let one side cook for about 10-15 minutes (it’ll get hot, bubbly and a little crispy).

Using a flat cookie sheet as a tool (or a giant spatula if you have one on hand), flip the crust over and baste with olive oil.

Add pesto (we only add it to half) and let cook for about five minutes.

Add mozzarella, goat cheese, tomatoes, veggies, grilled chicken and basil. Let cook for another 10-15 minutes.

    1. HAHAHA- love this Claire. We have this favorite wood-fired pizza spot that we never go to anymore. Part of it is that we have a 4 year old and a 2 year old and restaurants are less-than-relaxing right now. But part of it is figuring out how to make SUPER yummy pizza ourselves. 🙂
